Classic Fried Calamari

Ingredients:

  • 1 pound squid, cleaned and sliced into rings
  • 1 cup all-purpose flour
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 1/2 tsp. paprika
  • 1/2 cup milk
  • 2 eggs
  • Vegetable oil, for frying
  • Lemon wedges, for serving

Instructions:

  1. In a large bowl, mix together the flour, salt, black pepper, garlic powder, and paprika.
  2. In a separate bowl, whisk together the milk and eggs.
  3. Dip the squid rings into the milk and egg mixture, and then coat them in the flour mixture, shaking off any excess.
  4. Heat about 2 inches of vegetable oil in a large skillet over medium-high heat until it reaches 375°F.
  5. Working in batches, carefully add the squid rings to the hot oil and fry until golden brown, about 2-3 minutes.
  6. Use a slotted spoon to remove the fried calamari from the oil and place them on a paper towel-lined plate to drain.
  7. Serve the fried calamari hot with lemon wedges on the side.

Cooking Instructions

Boil/Poach: Add to seasoned boiling water, reduce heat, simmer for 30-40 minutes or until tender.
Sauté: Thaw completely, and add to a sauté pan with olive oil. Cook over medium high heat under done, approximately 5 minutes per side.
Deep Fry: Fry in vegetable oil at 375 ℉  and cook until golden brown.
