Cooked Whole Mussels
2 Tbsp Butter
3-4 Cloves garlic 
3 Tbsp Red Curry paste
3 Tbsp Yellow Curry paste
Fish sauce to taste
2 cans whole fat coconut milk
Thai basil
One lime juiced (reserve rind)
Lemon grass (crushed)
Cilantro to taste

In a large pot melt butter over medium heat, add finely chopped garlic, and cook for 2-3 minutes. Add curry pastes, fish sauce, coconut milk and simmer until fragrant, about 5 minutes.   Add basil, lime juice, reserved lime rind, bashed lemon grass, and cook for several more minutes until simmering. Add mussels and cover, reducing heat to medium low and steam mussels until opened, about 5-7 minutes. Add cilantro and salt & pepper to taste. Serve immediately with PLENTY of crusty bread! You won’t want to miss a drop.
