A New England classic, with distinct twist from added tarragon! Our lobster salad is a sure-fire hit with every lobster lover, and with our cooked lobster meat, it can be ready in under an hour with only a few simple ingredients. Perfect as a salad, or as a traditional lobster roll, just don’t forget the chips!
1lb Cooked Lobster Meat
1/4 Cup Chopped Scallions
Juice of 1 Lemon (3 tbsp)
1/3 Cup Mayonnaise
2 Tbsp Fresh Tarragon
Salt & Pepper to taste
Combine scallions, lemon juice, mayonnaise, and tarragon in
a bowl. Cover, and refrigerate for half an hour. Add lobster meat to mayonnaise mixture, and stir, coating thoroughly. Add Salt and Pepper to taste. Serve with salad or on a hot dog roll for a perfect summer meal any time of year!
