
Perfect for a quick summer dinner, our incredibly simple shrimp ceviche comes together in no time. Healthy, cool and fresh
with a perfect amount of kick from fresh citrus and a touch of heat, this will immediately become your family’s favorite go-to
summer meal.
INGREDIENTS
1lb Peeled & Deveined shrimp
Juice from 6 Limes (about 3/4 Cup)
Juice from 4 Lemons (about 3/4 Cup)
1 Cup Chopped Red Onion
1 Minced Serrano Chili (seeds removed)
1 Cup Fresh Chopped Cilantro
1 Cucumber (peeled and chopped into chunks)
1 Avocado (cut into chunks)
Salt & Pepper to taste
PRECOOK SHRIMP* Bring 2 quarts salted water to a boil, add shrimp
and cook for 1-2 minutes. Remove shrimp immediately and place in a
bowl of ice water. Chop shrimp and add to a bowl with lemon and lime juice, red onion, and chili. Cover and refrigerate for 1/2 an hour.
Just before serving, add remaining ingredients and toss. Serve with
tortilla chips, tostadas, over rice, or with salad greens.
OR use our pre-cooked shrimp for an even easier meal!
* While traditional ceviche is made with raw fish, “cooked” in lime juice for several hours, we have simplified the process by pre-cooking our shrimp.
