CALAMARI IN UMIDO

This hearty Italian classic stew is made with tender calamari and a savory Mediterranean tomato sauce that is perfect year round. Fresh chunks of warm crusty bread is a must for this recipe.

INGREDIENTS
1lb Calamari
EVOO
1 Chopped Red Onion
4 Cloves Garlic (Minced)
1/2 Cup Dry White Wine
1 Fresh Tomato, Chopped
12oz Can Tomato Purée
1 Tbsp Capers
1/4 Cup Taggiasche Olives
Salt & Pepper To Taste
Fresh Chopped Basil

Thaw Calamari in refrigerator for several hours, or quick thaw in sink under
room temperature water. Heat olive oil in a large pot. Add onion and garlic and sauté until soft, 4-5 minutes. Add white wine, and fresh tomato and tomato purée. Reduce heat and simmer for 10 minutes. Add calamari, capers, and olives. Simmer for another 10-15 minutes.
Top with fresh basil and serve immediately with crusty bread. Enjoy!
